TAGLIATELLE
with pepper
Ingredients:
250 tagliatelle, 1 yellow pepper, 1
red pepper, 1 onion, 4 spoons extra
virgin olive oil, 1 spoon curry, 1 medium
pork sausage, 200g peeled tomatoes,
50g tomato extract, grated Parmigiano
Reggiano, 1lz glass dry white wine,
salt.
Preparation: Clean the onion,
slice it and brown it in some oil. Add
curry and some drops of water. Brown
the crushed sausage with onion and curry,
then pour the wine. Wash and cut in
small pieces the peppers and add them
in the same frying pan. Let them cook
until they will have lost their water.
Boil Tagliatelle in abundant salted
water, drain them "al dente" and flavour
them with sauce of peppers and Parmigiano
Reggiano cheese.
