LA SFOGLIA
The Sfoglia
of La Campofilone could be used without
a previous cooking, in order to prepare
a delicious lasagne with ragout, béchamel,
Parmigiano Reggiano cheese or with the
most varied relishes or white creams,
served with vegetables, such as aubergines,
courgettes, artichokes, mushrooms. In
order to obtain an excellent result
you have to alternate layers of La Sfoglia
and abundant sauce (which must be necessarily
more liquid). If you prefer, you can
cook La Sfoglia in advance, dipping
it in boiling water for a minute.
