STROZZAPRETI
with sausage ragout

Ingredients: 250g strozzapreti, 4 ripe tomatoes, 1 small onions, 2 sausages, 1 garlic clove, Parmigiano Reggiano cheese, salt. Preparation: Put oil, garlic and finely minced onion in a pan, let become soft for some minutes, then add the sausages and brown the whole. Add the tomatoes at the end and let the ragout cook. Cook Strozzapreti in abundant boiling water, drain them "al dente" and flavour them with the ragout. Season with grated Parmigiano Reggiano cheese.
