250g linguine, 500g mushrooms (any kinds),
1lz onion, garlic clove, 30g parsley,
100g sweet gorgonzola cheese, 100g mascarpone,
4 spoons extra virgin olive oil, grated
Parmigiano Reggiano cheese, salt and
Preparation: Clean onion and
garlic; chop them up and brown them
in some oil. Clean, wash and slice the
mushrooms, add them to the browned onion
and garlic and add salt and pepper.
Let everything cook for more or less
10 minutes by low heat. Cut gorgonzola
cheese in small pieces, add it with
mascarpone. Melt the cheeses stirring
constantly. Boil Linguine in abundant
salted water, drain them "al dente"
and flavour them with the sauce. Add
the cleaned , washed and chopped parsley.
